Marie-Claude Morin: The simplest recipes are often the most delicious! I learned to cook quickly over the years and often with very few ingredients. It is a pride for me to say that in less than 30 minutes I am able to put a tasty dish on the table for my family. With our rapid pace of life, I think it's important to have a few cookbooks with « fast recipes » on the kitchen counter. I call this an everyday book. And ultimately, it is often the recipe books we use most often.

Marie-Claude: I often speak of the essential elements of my pantry. It is imperative to have a pantry well stocked to make up for all contingencies. Key ingredients in my fridge are fresh fruits and vegetables, tofu, cheese, eggs, pesto, yogurt ... The essential elements in my freezer are bread, frozen vegetables, balls of pastry. Key elements of my pantry are also known as legumes, rice, whole grains, cans of tomatoes, spices and nuts.
CommitmentNow.com: Your recipes appear to be drawn from many different cultures and countries. Did you intend to make this a multinational recipe book?
Marie-Claude: I think our diet has changed dramatically over the past 20 years. The number of foods found in grocery stores today is huge, varied and more accessible. I also think that we are more aware of the availability of the food around the world and it has changed the way we eat. Our curiosity led us to discover new dishes and we want to integrate them into our daily lives. Who ate hummus 20 years ago?? Yet today, hummus is part of our lives. It is this new way of life and my recipe book is naturally influenced by various world cuisines.

Marie-Claude: Not at all. Initially, it was intended to be a book designed for people who are not vegetarians. People told me often that they wanted to incorporate vegetarian meals into their diets 2 to 3 times a week. But people kept telling me they did not know what to prepare and they had no inspiration. They asked my advice knowing that I was a vegetarian. I wanted them to discover this type of food and provide them with accessible recipes with ingredients easy to find.

Marie-Claude: I first designed this book to please the vegetarian that I am. I had long wanted to see a vegetarian cookbook with easy, inviting yet simple recipes. As I could not find a book to my taste, I thought that I should write it.This is how my adventure began. And I'm about to launch this fall my fifth cookbook. Life is full of surprises!

Marie-Claude: Some of the recipes in this book have been with me for years. There are salads that I have been making for so long! I love salads, I could eat salad every day of the year. I love all the recipes containing tofu ... and I especially like the sugar pie recipes of my grandmother. A small indulgence you'll find at the end of the book. Bon appetit!
